- Place the beets in a pan, add 2-3 cups of water, cook on medium-low heat for about an hour until they softens.
- Remove the pan from heat and set aside to cool.
- Remove the skin, cut into small bite-size pieces or coarsely grate the beets using a food processor or a hand grater.
- Combine the sugar, yogurt, beets and a dash of salt. Mix well. Refrigerate for a couple of hours.
