Ajil-Persian Mixed Nuts

آجیل - Ajil, Persian mixed nuts, is one of the most favorite treats served during parties, Yalda, Chahar Shanbeh Suri, and Nowruz celebrations. Every household mixes its ajil based on taste, preferences, and availability. Almonds, pistachios, cashews, hazelnuts, walnuts, roasted chickpeas, raisins, dried figs, and dried white mulberries are all classic staples. In many homes, toasted and seasoned seeds, especially watermelon and pumpkin seeds, are also added.

Growing up, our home always had a generous bowl of ajil on the sofreh. My personal weakness was cashews. I would pick them out one by one before guests arrived. Another childhood favorite was dried sour cherries, which I took in small packets to school to share with my classmates. Over the years, chickpeas became my favorite (after almonds!), but one thing never changed. As you already know, Persian pistachios are considered some of the best in the world. Beyond being a part of ajil, pistachios and almonds are used widely in Persian cooking as well. Ajil is not only a festive snack, but it's also a nutritious blend that's perfect for school, work, and long road trips.

Ajil Persian Mixed Nuts

Ajil - Mixed Nuts Recipe

-1 1/2 cups pistachios
-1 cup almonds
-1 cup cashews 
-1 cup roasted chickpeas 
-1/2 cup hazelnuts
-1/2 cup raisins
-1/2 cup walnuts
-1/2 cup dried white mulberries
-A handful of dried apricots
-A handful of dried figs

Instructions

1. Place all ingredients in a large bowl or container.
2. Gently toss to combine. 
3. Serve in a beautiful bowl and enjoy!
